The Proof Is in the Dough: Sandella’s System Sales Growth Soars

According to Darren Tristano, vice president of the Chicago-based research firm, Technomic, sales at the top bakery-cafes in the country have been soaring, and show no signs of slowing down. 'The bakery-cafe industry grew at a rate of 13.3 percent in 2006 compared to the entire foodservice industry, which grew at a rate of 6 percent,' Tristano says. Sales at Panera increased by nearly 20 percent, and Einstein Bros. Bagels grew at 9 percent. Smaller, more full-service bakery-café chains, such as Paradise Bakery & Cafe, Crispers, Sandella's Flatbread, and Camille's Sidewalk Cafe grew at a whopping 21.5 percent, 40 percent, 43.3 percent and 45.4 percent, respectively, according to a Technomic report.
